Cooking Season 2005
Cooking class shall be on
- Home Made Pasta: Tagliatelle, Ciriole, Maltagliati, Gnocchi, Lasagne, Stuffed Pasta (i.e.
ravioli, tortellini,cannelloni)
- Pizza: Cooked on wood-burning oven, focaccia, bread and quiches
- Traditional Regional Dishes:
“Tagliata” (chopped meat), eggplants and zucchini parmigiana, cicken
cacciatora, stuffed zucchini and bell pepper, “spezzatino”, “involtini”,
“saltimbocca”, “frtittata”, fried zucchini flowers
- Cakes and Desserts:
“Grandma pie”, “Crostata”, “Cantuccini”, home made Ice-Cream, Baked
Ricotta
- Appetizer and Finger Food
- Full Italian Menu “starter to dessert”

Location: Amelia – Umbria
Discover the ancient hill-top town of Amelia, on a breath-taking
position along the way from Rome (1 ½ hour drive from the International
Airport) to the major art cities of Umbria (Orvieto, Spoleto, Todi,
Assisi, Perugia). Amelia features a unique underground system and
cisterns of the roman age (entrance included for Our guests), and it is
located nearby the marvellous southern Umbrian valley of Terni and
Marmore water-falls.
Arrangements: The Cooking Class will be taken by “Caterina” a professional Cook, with
her long-dated expertise in Gastronomy and Umbrian Cousine (choice among
the 6 main categories of Umbrian and Italian food).
Duration 1h00 hour introductory lecture + 2h00 approx of cooking + final
lunch. Each client will be given a presentation copy in English with
cooking instructions and recipes.
Wine-tasting Provided by “Orvieto D.O.C.” (white wine) and “La Palazzola
d.o.c.” (red wine).

Comfortable Coach or mini-van, air co.: visiting the food market, local
farms (pecorino cheese, truffles, olive oil, honey), wine-cellars,
oil-mill. Party of 4 to 7 clients. Bus supplement may vary due to milage
and different itineraries.
